Peanut Butter Cup Cookies are a delicious treat that combines two beloved flavors: peanut butter and chocolate.
Ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup creamy peanut butter
- 1 egg
- 1 teaspoon pure vanilla extract
- Mini peanut butter cups, unwrapped (as many as you'd like)
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until the mixture is smooth and fluffy.
- Add the egg and vanilla extract to the butter-sugar mixture and beat until well combined.
- Gradually add the dry ingredients to the wet mixture and mix until a cookie dough forms.
- Scoop out portions of cookie dough and roll them into balls. Place these dough balls on the prepared baking sheet.
- Flatten each dough ball slightly with the back of a fork, creating a crisscross pattern on top.
- Press a mini peanut butter cup into the center of each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
